Ghee is clarified butter. It is made by simmering unsalted butter in a cooking vessel until all water has boiled off and the milk solids, or protein, have settled to the bottom and a scum has floated on top. Water, sugar, salts, lactose has been taken out of the butter leaving only the pure fat which is ghee.
Ghee increases digestive fire (excellent for vatas), it also has a cooling effect on the body (excellent for Pittas). The all ready oily Kaphas should have to satisfy with only a small amount of this delicious butter.
Ghee:
-is a sattvic food: brings harmony and peace to the mind
-nourishes all bodily tissue and keeps them supple
-has no harmful trans fats
-relieves constipation
-does not burn, has a high smoke point
-nourishes the skin and prevents wrinkles (which is beneficial for the dry vata)
